Persimmon and Arugula Salad with Balsamic Glaze
It’s cold and rainy and I needed a reason to eat a persimmon.
If you follow me on Instagram you know what an obsession I have for this fabulous winter fruit.
This salad took all of 30 seconds to prepare and it is as healthy as it is tasty. 100% plant-based and a perfect quick fix to keep you going until lunch.
The sweetness of the persimmon and balsamic glaze mixed with the peppery arugula really hits the spot.
What you need:
Arugula
Persimmon
Trader Joe’s balsamic glaze
What you do:
Pile a handful of arugula on a plate, top with sliced persimmon and drizzle with balsamic glaze.

Today I pulled out some of my mother’s china. It is so special to me and rather than have it sit gathering dust, this year I decided to use it more so it can be enjoyed.
